Food As Medicine
This concept and quote is attributed to the famous Greek philosopher Hippocrates, it’s an amazing thought as he lived thousands of years ago. It makes you think, are we food producers or medicine/health producers. Are we in the food business or are we in the health business or both!!
Nutrient density levels in food have some shocking results!
The USDA undertook a study from 1975 until 2001 and found that
Apples-Vitamin A is down 41%
Broccoli- Calcium and Vitamin A are down 50%
Cauliflower – Vitamin C is down 45%, Vitamin B1 is down 48% and Vitamin B2 is down 47%.

Elmer G. Heinrich has suggested that “the nutritional value of modern foods isn’t just declining, it’s collapsing…The soil near the top eight feet of the earth, where our plants grow, is severally devoid of minerals compared to millions of years ago.”
The most important statement made by Elmer G. Heinrich is, “CHEMICALLY DEPENDENT MODERN FARMING METHODS DOES NOT PRODUCE NUTRITIOUS FOOD.”
In 2000, the Department of Environment, Food and Rural Affairs in the UK highlighted that “Trace Minerals in UK Fruit and Vegetable had fallen by 76 percent.”
This turns the debate around about feeding more people on the planet in the next 25 years on its head, maybe we should focus on producing more nutrient dense food instead of more tons of low nutrient dense food???
